Not too often I run into a style I’m not super familiar with, but this Tønne from @greatlakesbeer is one. Made with Kviek yeast, which are farmhouse strains of yeast from Norway. I’ve actually brewed using a strain of this yeast, but attempted to make a traditional version of a beer I’d never had. And this one isn’t meant to be historically accurate at all, it just uses the yeast, which is a monster of a strain; super heat tolerant (traditionally some brewers would keep their fermenting beer in their saunas), and highly efficient. A big reason we have these yeasts has been from the hard work collecting, identifying, and propagating samples from Norway by @preisscience and the crew at @escarpmentlabs. Anyway, this one is a Chardonnay barrel-aged beauty. Huge bright vinous aromas on the nose, it’s juicy and fragrant tasting showing the wine with big white grape, apricots, and oak, with maybe a bit of spicy yeasty esters, and a bit of bubblegum or even a hint of rubber. The linger is nicely dry white wine echos, with little glimmers of apricot and berries. It’s a fabulous beer, wonderfully bright and refreshing, with enough depth and complexity to spend some time with. Not sure if there’s any left, but I got it at the brewery about 10 days ago. If you’re in the area stop by and check. There’s *always* something worth grabbing .
